A chef’s secrets for buying fish and seafood

- Rule no. 1: always opt for seasonal products.
- To avoid unpleasant surprises, only buy from reputable, well-known fishmongers.
- Fish should have firm flesh that springs back when pressed.
- Give your fish a good whiff. It should have a pleasant ocean aroma. Any other smell indicates lack of freshness. Skip it!
- Always ask your fishmonger when the fish was delivered.
- Even if fish is kept on ice, take a pass on anything delivered more than a day or two earlier. If fresh products aren’t available, choose something that was flash-frozen at sea.
Chef de Volpi’s favourite seafood: Quebec lobster, doré (walleye), halibut, salmon, trout, princess scallops, shrimp, Arctic grayling, cod.
